Ingredients
  

Pasta and Vegetables
  • 12 oz Spaghetti or Linguine Choose your preferred pasta type.
  • 14 oz Canned Artichoke Hearts Quartered, drained, and roughly chopped.
  • 1 large Lemon Zested and juiced.
Aromatics and Oils
  • 3 tbsp Olive Oil
  • 4 cloves Garlic Minced.
Broth and Cheese
  • 1/2 cup Vegetable Broth
  • 1/2 cup Parmesan Cheese Grated, plus more for serving.
Herbs and Seasonings
  • 1/4 cup Fresh Parsley Chopped.
  • 1/4 cup Fresh Basil Chopped.
  • 1/2 tsp Red Pepper Flakes Optional.

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain.
Sautéing the Aromatics
  1. In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds, or until fragrant.
Adding the Artichokes
  1. Stir in the chopped artichoke hearts and cook for an additional 2-3 minutes until they begin to brown slightly.
Mixing the Ingredients
  1. To the skillet, add the lemon zest, lemon juice, and vegetable broth. Stir well to combine, allowing the flavors to meld together for about 2-5 minutes.
Combining with Pasta
  1. Toss the drained pasta into the skillet, adding a splash of reserved pasta water if necessary to help everything combine.
Finishing Off
  1. Add the grated Parmesan cheese, fresh parsley, and basil, along with salt, black pepper, and red pepper flakes (if using). Toss everything together until well mixed.
Serving
  1. Plate the pasta and sprinkle extra Parmesan on top for a beautiful finish, then enjoy immediately!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat with a splash of water or broth to maintain moisture.
