  • 3 medium carrots, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth Check label for gluten-free if needed.
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation
  1. Dice the onion, carrots, and celery. Mince the garlic.
Cooking
  1. In the slow cooker, layer the rinsed wild rice, diced vegetables, minced garlic, and chicken breasts.
  2. Pour in the chicken broth, then sprinkle with thyme, salt, and pepper. Stir gently to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove chicken breasts, shred them with two forks, and return to the soup.
  5. Stir in the heavy cream, adjust seasoning if necessary, and mix well.
  6. Serve garnished with fresh parsley.

Notes

For deeper flavor, sauté the vegetables before adding to the slow cooker. Consider adding fresh herbs, spinach, or kale for extra nutrients. Avoid rinsing the wild rice to prevent grit and keep an eye on cooking times to avoid mushiness.
