Preparation
- In a bowl, whisk together olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Dice the chicken breast into even, bite-sized pieces to ensure uniform cooking.
- Add the chicken to the marinade, making sure every piece is well coated. Cover and let it marinate for at least 30 minutes, or up to 4 hours in the fridge for deeper flavor.
- While the chicken marinates, chop the bell peppers, onions, and any other vegetables you’re using.
Cooking
- Thread the marinated chicken and veggies onto skewers, alternating between chicken and vegetables for variety.
- Preheat your grill to medium-high heat. For stovetop cooking, use a skillet over medium heat.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serving
- Remove from the grill and let them rest for a few minutes before serving. They can be enjoyed fresh off the grill or at room temperature.
Notes
Soak wooden skewers in water for 30 minutes to prevent burning. Avoid overcrowding the skewers for even cooking.
