  • 10 tbsp whole-wheat flour
  • 6 tbsp corn flour
  • 4 tbsp white granulated sugar Can substitute with natural sweeteners.
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
Wet Ingredients
  • 6 tbsp unsweetened plant-based milk Any plant-based milk works well.
  • 2 tsp vanilla extract
  • 2 tsp oil Can be vegetable or coconut oil.
Add-ins
  • 2 tbsp chocolate chips Feel free to use alternatives like nuts or dried fruit.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the whole-wheat flour, corn flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  3. Create a well in the center of your dry mix and pour in the plant-based milk, vanilla extract, and oil. Mix until just combined; lumps are okay.
  4. Fold in the chocolate chips gently.
  5. Spread the mixture thinly on a parchment-lined baking sheet, creating clusters as desired.
Baking
  1. Bake for 20-25 minutes or until golden brown, stirring halfway through.
  2. Allow to cool completely before breaking into pieces.
  3. Store in an airtight container to maintain crunch.
Serving
  1. Enjoy in a bowl with milk or as a snack on its own.

Notes

For extra crunch, cool in the oven after baking. Experiment with spices like cinnamon for varied flavors.
