Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
Mixing Ingredients
- In a large bowl, combine the pumpkin purée, shredded apple, grated carrots, vegetable oil, and sugar. Mix until well incorporated.
- Add the eggs one at a time, mixing until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently. Fold in the chopped walnuts.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For variations, you can make it gluten-free, add dried cranberries or raisins, or use flaxseed meal or applesauce to substitute eggs. Avoid overmixing for a lighter texture!
