Ingredients
  

Wet Ingredients
  • 1 cup pumpkin purée
  • 1 cup shredded apple
  • 1 cup grated carrots
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 pieces eggs large eggs
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
Add-ins
  • 1/2 cup chopped walnuts optional, can substitute with pecans

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
Mixing Ingredients
  1. In a large bowl, combine the pumpkin purée, shredded apple, grated carrots, vegetable oil, and sugar. Mix until well incorporated.
  2. Add the eggs one at a time, mixing until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently. Fold in the chopped walnuts.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For variations, you can make it gluten-free, add dried cranberries or raisins, or use flaxseed meal or applesauce to substitute eggs. Avoid overmixing for a lighter texture!
