Method
 

Preparation
  1. Slice the yellow onions thinly.
  2. In a large pot, heat the butter over medium heat.
  3. Add the sliced onions and cook until softened and golden brown, about 30-40 minutes, stirring frequently.
  4. Once caramelized, add the sugar and scraping the bottom of the pot.
  5. Pour in the beef broth and let simmer for at least 30 minutes. Season with salt and pepper.
  6. Toast slices of baguette until golden.
  7. Ladle soup into oven-safe bowls, top with toasted baguette, and sprinkle with Gruyère cheese.
  8. Broil until cheese is bubbly and golden, about 3-5 minutes.

Notes

For best results, allow the soup to simmer longer for deeper flavor. Consider adding thyme or bay leaves for added depth.
