Preparation
- Slice the eggplants into ¼ inch thick slices and sprinkle both sides with salt. Let them sit for about 30 minutes to draw out moisture.
- Rinse the eggplant slices under cold water to remove the salt and pat them dry with a paper towel.
Cooking
- Choose to either fry or bake the eggplant slices. For frying, heat olive oil in a skillet over medium-high heat, fry until golden brown on both sides, then drain on paper towels.
- For baking, preheat the oven to 400°F (200°C), brush slices with olive oil, and roast for about 25 minutes, flipping halfway through.
- In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer the eggplant slices, marinara sauce, mozzarella, and basil. Repeat, finishing with marinara sauce and a topping of Parmesan cheese.
- Cover with aluminum foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until cheese is melted and golden.
- Allow the dish to rest for 10 minutes before slicing and serving warm.
