  • 2 large eggplants Sliced into ¼ inch thick slices.
  • 4 cups marinara sauce Use the best quality or homemade for authentic flavor.
  • 2 cups mozzarella cheese, shredded For a gooey texture.
  • 1 cup grated Parmesan cheese For topping.
  • 1 cup fresh basil leaves Alternating layers with the eggplant.

Preparation
  1. Slice the eggplants into ¼ inch thick slices and sprinkle both sides with salt. Let them sit for about 30 minutes to draw out moisture.
  2. Rinse the eggplant slices under cold water to remove the salt and pat them dry with a paper towel.
Cooking
  1. Choose to either fry or bake the eggplant slices. For frying, heat olive oil in a skillet over medium-high heat, fry until golden brown on both sides, then drain on paper towels.
  2. For baking, preheat the oven to 400°F (200°C), brush slices with olive oil, and roast for about 25 minutes, flipping halfway through.
  3. In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer the eggplant slices, marinara sauce, mozzarella, and basil. Repeat, finishing with marinara sauce and a topping of Parmesan cheese.
  4. Cover with aluminum foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until cheese is melted and golden.
  5. Allow the dish to rest for 10 minutes before slicing and serving warm.

Notes

Use the best-quality ingredients for the best flavor. If you're preparing in advance, you can assemble the dish a day ahead. This dish can be served with pasta, as a sandwich, or with a salad.
