  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Optional: marinara sauce for dipping

Method
 

Preparation
  1. Grate the zucchinis using a box grater and place the grated zucchini inside a clean kitchen towel. Squeeze out the excess water.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, salt, and garlic powder. Mix well.
Combine Ingredients
  1. In another bowl, whisk together the egg, mozzarella, Parmesan, and olive oil. Add the grated zucchini and mix until combined.
  2. Gradually fold the dry ingredients into the wet mixture until fully incorporated. The batter will be slightly thick.
Bake
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread the zucchini mixture evenly on the baking sheet, forming a rectangle about ½ inch thick.
  3. Bake for 20-25 minutes, or until the top is golden brown.
Serving
  1. Let the breadsticks cool for a few minutes before slicing into sticks. Serve warm with marinara sauce if desired.

Notes

Squeeze out as much moisture as possible from the grated zucchini to prevent sogginess. Customize flavors with herbs or different cheeses.
