Ingredients
  

For the Tacos
  • 1 pound ground beef (80/20 fat percentage) Use high-quality beef for best taste.
  • 1 teaspoon kosher salt
  • 10 cracks fresh black pepper
  • 6 pieces flour tortillas (six-inch) Opt for fresh, quality tortillas.
  • 6 slices muenster or provolone cheese Any melting cheese will work.
  • Shredded lettuce As desired
  • Chopped white onion As desired
  • Dill pickle chips For topping
For the Special Sauce
  • 1/2 cup mayonnaise
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon mustard
  • 2 tablespoons minced bread & butter pickles
  • 1 tablespoon pickle brine
  • 10 cracks fresh black pepper
  • 1/4 teaspoon Worcestershire sauce

Method
 

Preparation
  1. In a bowl, combine the ground beef with kosher salt and black pepper. Mix gently to avoid overworking the meat.
  2. Heat a large skillet or griddle over medium-high heat. Once hot, form the beef into equal balls (about the size of a golf ball).
  3. Place them on the skillet and smash down with a spatula to flatten. Cook for about 2-3 minutes per side until browned and crispy.
  4. During the last minute of cooking, place a slice of muenster or provolone cheese on each patty, allowing it to melt.
  5. While the patties are finishing, warm the tortillas on another skillet for about 30 seconds on each side until pliable.
  6. In a small bowl, whisk together all the sauce ingredients. Adjust to taste if desired.
  7. Layer the smashed patties in the warmed tortillas, drizzle the special sauce over the top, and add your preferred toppings.
  8. Serve your tacos immediately while they’re hot and delicious!

Notes

To enhance flavor, try various toppings or sauces. Just be cautious about overcooking the beef to maintain juiciness.
