Preparation
- In a bowl, combine the ground beef with kosher salt and black pepper. Mix gently to avoid overworking the meat.
- Heat a large skillet or griddle over medium-high heat. Once hot, form the beef into equal balls (about the size of a golf ball).
- Place them on the skillet and smash down with a spatula to flatten. Cook for about 2-3 minutes per side until browned and crispy.
- During the last minute of cooking, place a slice of muenster or provolone cheese on each patty, allowing it to melt.
- While the patties are finishing, warm the tortillas on another skillet for about 30 seconds on each side until pliable.
- In a small bowl, whisk together all the sauce ingredients. Adjust to taste if desired.
- Layer the smashed patties in the warmed tortillas, drizzle the special sauce over the top, and add your preferred toppings.
- Serve your tacos immediately while they’re hot and delicious!
