  • 2 teaspoon granular monk fruit sweetener Can substitute with honey or maple syrup.
  • 1/4 teaspoon vanilla extract
  • Pinch salt Enhances flavor.
Toppings
  • 1/2 cup peaches (fresh, frozen, or canned) Chop peaches if using fresh.
  • 2 Tablespoons walnuts (chopped, optional) Optional for added crunch.

Preparation
  1. In a mason jar or bowl, combine the rolled oats, Greek yogurt, milk, chia seeds, monk fruit sweetener, vanilla extract, and a pinch of salt. Stir thoroughly until the mixture is well combined.
  2. Chop the peaches (if using fresh) and gently fold them into the oat mixture. If you’re using frozen or canned peaches, ensure they are drained and chopped into bite-sized pieces.
  3. Place the lid on the jar or cover bowl with plastic wrap. Refrigerate overnight or at least for 4 hours to allow the oats to soak and soften.
Serving
  1. In the morning, give your oats a good stir. Add more peaches or top with chopped walnuts for an extra crunch before diving in.

Notes

Store in individual containers for up to 4-5 days. Add fresh fruit or toppings right before serving for maximum freshness.
