  • 8 oz pasta (spaghetti or penne)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Grated Parmesan cheese (optional)

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the rest.
Sautéing Garlic
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, just until fragrant (be careful not to burn it!).
Adding the Vegetables
  1. Toss in the halved cherry tomatoes and cook for about 3-4 minutes until they start to soften.
  2. Next, add the fresh spinach, stirring until it wilts down—this should take about 2 minutes.
Combining Ingredients
  1. Add the drained pasta to the skillet. Combine everything meticulously and add a splash of reserved pasta water to moisten everything if it appears a little dry.
Final Seasoning
  1. Sprinkle with salt, black pepper, and toss thoroughly. For an extra touch, consider adding grated Parmesan cheese at this step for creaminess.
