Ingredients
  

Muffin Batter
  • 1 cup sugar
  • 1 1/4 cups all-purpose flour
  • 5 tablespoons unsalted butter (melted)
  • 2 large eggs ensure they are at room temperature
  • 1/2 cup full fat sour cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Streusel Topping
  • 1/2 cup all-purpose flour
  • 2/3 cup light brown sugar dark brown sugar can be used as well
  • 1 tablespoon ground cinnamon
  • 1/2 cup unsalted butter (melted)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, make the streusel topping by combining 1/2 cup of flour, 2/3 cup of brown sugar, 1 tablespoon of cinnamon, and melted butter. Mix until crumbly.
  4. In another bowl, whisk together the melted butter, eggs, sour cream, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ones and stir until just combined, it’s okay if there are a few lumps.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Sprinkle the streusel topping generously over the batter in each muffin cup.
Baking
  1. Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Storage: Store muffins in an airtight container at room temperature for up to three days or freeze for longer storage. Consider adding lemon or orange zest to the batter for a fresh twist. Add nuts or fruits for variation.
