Preparation
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, make the streusel topping by combining 1/2 cup of flour, 2/3 cup of brown sugar, 1 tablespoon of cinnamon, and melted butter. Mix until crumbly.
- In another bowl, whisk together the melted butter, eggs, sour cream, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ones and stir until just combined, it’s okay if there are a few lumps.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Sprinkle the streusel topping generously over the batter in each muffin cup.
Baking
- Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Storage: Store muffins in an airtight container at room temperature for up to three days or freeze for longer storage. Consider adding lemon or orange zest to the batter for a fresh twist. Add nuts or fruits for variation.
