Ingredients
  

Muffin Base
  • 2 to 3 pieces ripe bananas, mashed The riper the bananas, the sweeter the muffins.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional) Add for extra crunch and flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease your muffin tin or line it with paper liners.
  3. In a large mixing bowl, mash the bananas until smooth. Add the granulated sugar, brown sugar, and melted butter. Mix until combined. Stir in the egg and vanilla extract until well blended.
  4. In a separate bowl, whisk together the baking soda, baking powder, salt, flour, rolled oats, and cinnamon.
  5. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined, being careful not to overmix.
  6. If using, fold in the chopped nuts.
  7. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. In a small bowl, mix together additional flour, sugar, and butter to create a crumbly topping. Sprinkle this over the muffins.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

For best results, use very ripe bananas and don’t overmix the batter. Try varying the flour for added nutrition.
