Preparation
  1. In a large bowl, combine leftover mashed potatoes, shredded cheese, green onions (if using), salt, and pepper. Mix well.
  2. Beat the egg separately, then add it to the potato mixture to bind the ingredients together.
  3. Shape the mixture into small balls or patties, roughly the size of golf balls.
  4. Roll each nugget in breadcrumbs to ensure a crispy outer layer.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Fry the nuggets until golden brown on all sides, about 3-4 minutes per side.
  3. Transfer the crispy nuggets to a paper towel-lined plate to absorb excess oil, then serve hot.

Notes

For a healthier option, bake the nuggets at 400°F (200°C) for 20-25 minutes until golden brown. Serve with a dipping sauce such as ranch, ketchup, or sweet chili sauce for added flavor.
