  • 4 cups fresh watermelon, cubed Choose ripe watermelon for the best flavor.
  • 1 cup Greek yogurt Can substitute with a dairy-free alternative.
  • 2 tablespoons honey or agave syrup Optional, adjust to taste.
  • 1 tablespoon lemon juice Adds brightness to the flavor.
Optional Add-Ins
  • 1/4 cup fresh mint For a refreshing twist.
  • 2 tablespoons lime juice For an extra zing.
  • 1/2 cup coconut milk For a tropical flavor.

Method
 

Preparation
  1. Remove the seeds from your watermelon and chop it into cubes.
  2. In a blender, combine the cubed watermelon, Greek yogurt, a splash of lemon juice, and honey/agave syrup to taste.
  3. Blend until smooth.
  4. Taste the mixture and adjust sweetness if necessary, blending again if needed.
  5. Pour the blended mixture into popsicle molds, leaving a little space at the top for expansion.
  6. Insert wooden sticks into the molds.
  7. Freeze for at least 4-6 hours or until completely frozen.
  8. To remove, run warm water over the molds and gently pull on the sticks.

Notes

Choose ripe watermelon for the best flavor. You can layer mixture in molds for a two-tone effect. Store any leftovers in an airtight container to prevent freezer burn.
