Ingredients
  

Pasta and Sauce Base
  • 12 ounces spaghetti or fettuccine Use your favorite type of pasta.
  • 3 medium fresh plum or Roma tomatoes Or canned crushed tomatoes if fresh are not available.
  • 3 cloves garlic (minced) Fresh garlic is preferred for flavor.
  • 1 cup heavy cream Use a vegan alternative for a dairy-free dish.
  • 1/2 cup Parmesan cheese (grated) Nutritional yeast can be substituted for a vegan option.
  • 1 tablespoon olive oil For sautéing the garlic.
Garnish
  • 1/4 cup fresh basil For garnish before serving.

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to a boil and cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about a cup of pasta water before draining.
Preparing Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  2. Add the chopped tomatoes (or canned crushed tomatoes) and let them simmer for 5–7 minutes until they break down into a sauce.
  3. Stir in the heavy cream and mix until the sauce is smooth and creamy. If the sauce is too thick, incorporate a bit of reserved pasta water to adjust the texture.
Combining
  1. Add the drained pasta to the sauce, tossing everything together until every strand is coated. Sprinkle in the grated Parmesan cheese at this stage, if desired.
  2. Season with salt and pepper to taste. Garnish with fresh basil and additional cheese before serving.

Notes

Use fresh ingredients for the best flavor, and adjust the sauce's thickness with reserved pasta water. Experimenting with herbs like oregano or thyme can add depth to the flavor.
