Preparation
- In a large pot of salted boiling water, cook the fettuccine according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced chicken breast, seasoning with salt and pepper. Cook for 4-5 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
Cooking the Sauce
- In the same skillet, add another tablespoon of butter and minced garlic. Sauté for about 1 minute, until fragrant. Pour in the heavy cream, allowing it to simmer for 2-3 minutes, stirring occasionally.
- Gradually whisk in the grated Parmesan cheese until melted and smooth. Season the sauce with additional salt and pepper to taste.
Combining
- Add the cooked fettuccine and chicken back into the skillet, gently tossing to coat everything in the sauce. Cook for another 1-2 minutes to heat through.
- Garnish with fresh parsley and extra Parmesan if desired. Serve immediately and enjoy!
Notes
Store leftovers in an airtight container for up to 3 days. If the sauce thickens too much upon reheating, add a bit of cream or milk.
