  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Preparation
  1. In a large pot, add a drizzle of olive oil and heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Toss in the shredded rotisserie chicken and white beans. Stir well to combine.
  5. Sprinkle in the cumin, chili powder, salt, and pepper. Stir well to coat.
  6. Gradually add the chicken broth, bringing the mixture to a gentle simmer.
  7. Let it bubble softly for about 10 minutes to intensify the flavors.
  8. Reduce the heat and slowly stir in the heavy cream, warming through but not boiling.
  9. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.

Notes

For added nutrition, consider adding corn or chopped bell peppers. Meals can be made ahead and stored for up to 3 days in the fridge. Reheat with a splash of chicken broth.
