- In a medium bowl, combine the corn kernels with flour, baking powder, salt, and pepper. Stir until the corn is evenly coated.
- In another bowl, beat the eggs and mix in the milk. Pour this mixture into the dry ingredients and combine until just mixed. Avoid over-mixing to maintain fluffiness.
Cooking
- In a frying pan, heat about half an inch of oil over medium heat. Test the oil’s readiness by dropping in a small spoonful of batter; if it sizzles, you’re good to go!
- Spoon the corn batter into the hot oil, flattening them slightly as you go. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

- Corn fritters are best served hot! Pair them with applesauce or syrup for a delightful contrast.
