  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients and Sweeteners
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 tablespoon instant coffee or 1/4 cup brewed coffee
Add-Ins
  • 1/2 cup chocolate chips
  • Royal icing for decoration (optional) Can be added for decoration after cooling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined. Set aside.
  3. In another large bowl, cream the softened butter with granulated and brown sugar until light and fluffy.
  4. Stir in the instant coffee or brewed coffee and mix thoroughly.
  5. Gradually add the dry mixture into the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips until evenly distributed.
Baking
  1. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, leaving some space between them.
  2. Bake for about 10-12 minutes or until the edges are set but the centers still look slightly soft.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Decoration
  1. For an extra touch, drizzle with royal icing once cooled if desired.

Notes

For optimal flavor, use high-quality coffee. Avoid overmixing to keep cookies soft. You can experiment with nuts or different add-ins for variations.
