Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined. Set aside.
- In another large bowl, cream the softened butter with granulated and brown sugar until light and fluffy.
- Stir in the instant coffee or brewed coffee and mix thoroughly.
- Gradually add the dry mixture into the wet ingredients, mixing just until combined.
- Fold in the chocolate chips until evenly distributed.
Baking
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, leaving some space between them.
- Bake for about 10-12 minutes or until the edges are set but the centers still look slightly soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Decoration
- For an extra touch, drizzle with royal icing once cooled if desired.
Notes
For optimal flavor, use high-quality coffee. Avoid overmixing to keep cookies soft. You can experiment with nuts or different add-ins for variations.
