  • 1 can chickpeas, drained and rinsed Ensure to rinse to enhance the flavor.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste salt and pepper
Optional Ingredients
  • to taste tuna or salmon For added protein.

Method
 

Preparation
  1. Rinse and drain the canned chickpeas thoroughly.
  2. Chop the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
Mixing
  1. In a large mixing bowl, gently toss the chickpeas with the chopped cherry tomatoes, cucumber, red onion, and parsley.
  2. Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper to taste.
  3. Use a spatula to gently fold the ingredients together, keeping the chickpeas intact.
Chilling
  1. Allow the salad to chill in the refrigerator for at least 30 minutes to meld the flavors.
Serving
  1. Serve the chickpea salad on its own, as a side dish, or as a filling for wraps.

Notes

For a crunchier salad, consider adding diced bell peppers or shredded carrots. Fresh herbs like mint or cilantro can enhance the flavor. This salad can be made ahead of time for better flavor development.
