Preparation
- Slice the chicken thighs into bite-sized pieces and the zucchini into half-moons. Mince the garlic and have your sauces ready.
- In a mixing bowl, combine the chicken, soy sauce, cornstarch, sesame oil, and sugar. Let it marinate for at least 10-15 minutes.
Cooking
- In a large skillet or wok, heat the cooking oil over medium-high heat.
- Add the marinated chicken to the pan and sauté until golden and cooked through, about 5-7 minutes.
- Toss in the minced garlic and zucchini. Stir fry for another 3-4 minutes until the zucchini is tender yet still crisp.
- Drizzle the oyster sauce (and rice vinegar, if using) over the mixture. Stir everything together until well combined and heated through.
- Plate your Chicken Zucchini Stir Fry hot and sprinkle with ground black pepper if desired.
Notes
If you have leftovers, cool the stir fry quickly and store it in an airtight container in the fridge for up to 3-4 days. Reheat in a pan or microwave, being careful not to overheat.
