Ingredients

Main Ingredients
  • 1 pound ground chicken
  • 1 cup grated zucchini (squeezed to remove excess moisture)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying Sufficient amount for frying

Method

Preparation
  1. Begin by grating the zucchini and using a kitchen towel to squeeze out excess moisture. This step is crucial to avoid soggy fritters.
  2. In a large mixing bowl, combine the ground chicken, squeezed zucchini, shredded mozzarella, grated parmesan, flour, egg, garlic powder, onion powder, salt, and pepper. Stir everything together until well blended.
Cooking
  1. In a large skillet, heat oil over medium heat. You’ll want enough oil to cover the bottom of the pan, so the fritters can fry evenly.
  2. Using a scoop or your hands, form small patties from the mixture and gently place them in the hot oil.
  3. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy. Adjust the heat as necessary to ensure they cook thoroughly without burning.
  4. Once cooked, place the fritters on a paper towel-lined plate to absorb excess oil. Serve warm and enjoy!

Notes

To ensure optimal texture and flavor, squeeze out excess moisture from the zucchini and monitor the cooking time carefully.
