- In a large skillet over medium heat, add the lean ground beef. Cook until it’s browned, breaking it apart as it cooks, about 5-7 minutes.
- Once the beef is browned, sprinkle in the taco seasoning packet. Stir it in well to ensure the beef is fully coated.
- Add the can of beans (drained and rinsed), corn, and ready rice. Stir everything together to ensure an even mix.
- Reduce the heat to low and sprinkle the shredded cheese over the mixture. Cover the skillet with a lid for about 3-5 minutes, allowing the cheese to melt.
- Once the cheese has melted, remove the lid and season with salt and pepper to taste. Garnish with chopped cilantro or green onions if desired.
Notes
For extra flavor, consider adding jalapeños or cayenne pepper. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
