Method

Preparation
  1. Rinse 2 cups of sushi rice under cold water until the water runs clear.
  2. Cook the rice according to package instructions and mix with 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt. Let cool.
Assembling the Roll
  1. Lay a bamboo sushi mat on a flat surface and place a sheet of nori, shiny side down, on the mat.
  2. Wet your hands to prevent sticking and grab a handful of sushi rice. Evenly spread a thin layer over the nori, leaving about 1 inch at the top edge.
  3. Spoon crab (or imitation crab) in a line along the center, followed by slices of avocado and cucumber.
  4. Using the mat, start rolling the sushi away from you, applying gentle pressure while keeping the roll tight. Seal the edge of the nori with a little water.
  5. With a sharp, wet knife, cut the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts for cleaner slices.
  6. If desired, coat the top of the California Crunch Roll with tempura flakes for a crispy finish.

Notes

For best results, use short-grain sushi rice and wet your hands frequently to avoid sticking. Enjoy with soy sauce and wasabi for an authentic experience.
