Preparation
- Start by washing the cherry tomatoes and slicing them in half. Mince the garlic and chop the parsley finely.
Cooking
- In a pan over medium heat, melt 30g of butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Add the halved cherry tomatoes to the pan, along with the Kashmiri chilli powder. Cook for about 5-7 minutes until the tomatoes soften and release their juices. Stir occasionally.
Toast Preparation
- While the tomatoes are cooking, toast the slices of bread to your preferred level of crispness.
Assembly
- Place the toasted bread on a baking tray. Layer with sliced cheddar and red Leicester cheese, then spoon the sautéed tomatoes on top, ensuring to drizzle a bit of the buttery garlic sauce over everything.
Finishing
- Transfer the baking tray to a preheated oven at 200°C (392°F) and bake for around 5-7 minutes, or until the cheese is bubbling and golden brown.
- Remove from the oven, sprinkle with chopped parsley, and a dash of chilli flakes for a spicy kick. Serve warm.
Notes
Use fresh ingredients for the best flavor. Substitute different cheeses, add more vegetables or make it gluten-free with alternative bread if desired. Store leftovers in an airtight container for up to two days.
