Ingredients
  

Bread and Cheese
  • 120 g White Bread This will serve as the base for your cheesy delight.
  • 125 g Cheddar Cheese A classic choice for rich flavor and melty goodness.
  • 125 g Red Leicester Cheese Adds a deeper flavor and beautiful color contrast.
Tomato Mixture
  • 500 g Cherry Tomatoes The star of the dish, perfectly sweet and juicy.
  • 60 g Butter Because everything is better with butter!
  • 2 Cloves Garlic For an aromatic lift.
  • 1 tsp Kashmiri Chilli Powder To add subtle heat and color.
Garnish
  • 15 g Parsley For garnish and freshness.
  • 1 tsp Chilli Flakes Optional, for those who like a bit of extra kick.

Method
 

Preparation
  1. Start by washing the cherry tomatoes and slicing them in half. Mince the garlic and chop the parsley finely.
Cooking
  1. In a pan over medium heat, melt 30g of butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  2. Add the halved cherry tomatoes to the pan, along with the Kashmiri chilli powder. Cook for about 5-7 minutes until the tomatoes soften and release their juices. Stir occasionally.
Toast Preparation
  1. While the tomatoes are cooking, toast the slices of bread to your preferred level of crispness.
Assembly
  1. Place the toasted bread on a baking tray. Layer with sliced cheddar and red Leicester cheese, then spoon the sautéed tomatoes on top, ensuring to drizzle a bit of the buttery garlic sauce over everything.
Finishing
  1. Transfer the baking tray to a preheated oven at 200°C (392°F) and bake for around 5-7 minutes, or until the cheese is bubbling and golden brown.
  2. Remove from the oven, sprinkle with chopped parsley, and a dash of chilli flakes for a spicy kick. Serve warm.

Notes

Use fresh ingredients for the best flavor. Substitute different cheeses, add more vegetables or make it gluten-free with alternative bread if desired. Store leftovers in an airtight container for up to two days.
