Preparation
- In a mixing bowl, whisk together soy sauce, brown sugar, lime juice, olive oil, garlic, and ginger until well combined.
- Season the salmon fillets with salt and pepper, then place them in the marinade, making sure they're evenly coated. Let it sit while you prepare the foil.
- Tear off four large pieces of aluminum foil, each large enough to wrap around a fillet completely.
- On each piece of foil, place a salmon fillet in the center, then surround it with fresh pineapple chunks.
- Fold the sides of the foil over the salmon and pineapple, crimping the edges to create a sealed pouch.
Cooking
- Preheat your oven to 400°F (200°C) and place the foil packets on a baking sheet.
- Bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Carefully unwrap the foil (watch out for steam!) and garnish your delicious salmon with chopped green onions. Enjoy it right away!
Notes
Leftovers can be stored in the fridge for up to 3 days; simply reheat gently in the oven to maintain moisture and flavor.
