Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour For the base of the muffins.
  • 1 cup oats For added nutrition and texture.
  • 1 teaspoon baking powder Leavening agent for the muffins.
  • 1/2 teaspoon baking soda Helps muffins rise.
  • 1/2 teaspoon cinnamon For flavor.
Wet Ingredients
  • 1/2 cup applesauce Adds moisture and sweetness.
  • 1/2 cup mashed banana Natural sweetener.
  • 1/4 cup honey or maple syrup Choose based on preference.
  • 1/2 cup milk (or dairy-free alternative) For moisture.
  • 1 large egg Binds ingredients together.
Add-ins
  • 1/2 cup grated carrots Adds nutrition and sweetness.
  • 1/2 cup chopped apples or other fruits Customize based on preference.
  • 1/2 cup finely chopped spinach or other veggies Adds extra nutrients.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or a light spray of non-stick cooking spray.
  2. In a large mixing bowl, whisk together the whole wheat flour, oats, baking powder, baking soda, and cinnamon until well combined.
  3. In another bowl, combine the applesauce, mashed banana, honey (or maple syrup), milk, and egg. Stir until smooth.
  4. Pour the wet mixture into the dry ingredients, gently mixing until just combined. Be careful not to over-mix!
  5. Add in the grated carrots, chopped apples, and spinach (or your choice of veggies), folding them into the batter.
  6. Distribute the muffin batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  7. Place the muffin tin into the oven and bake for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove the muffins from the oven and let them cool for a few minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container at room temperature for a couple of days or freeze them for longer storage. Can be customized with different fruits and veggies as per preference.
