  • 2 whole ripe avocados Make sure they are perfectly ripe.
  • 1 cup corn (canned or fresh) If using fresh corn, cook briefly until tender.
  • 1 can black beans, rinsed and drained Rinse well before use.
  • 1 cup cherry tomatoes, halved
  • 1 whole lime, juiced Fresh lime juice enhances flavor.

  • to taste pepper
  • optional fresh cilantro for garnish Adds a pop of color and freshness.

Preparation
  1. Gather all your ingredients.
  2. If using fresh corn, cook it briefly until tender. If using canned corn, drain and rinse. Rinse the black beans as well.
Mixing
  1. In a medium bowl, cut the ripe avocados in half, remove the pits, and scoop the flesh into the bowl. Mash with a fork until creamy but slightly chunky.
  2. Add the corn, rinsed black beans, halved cherry tomatoes, lime juice, salt, and pepper to the mashed avocados. Mix gently to combine.
Finishing Touches
  1. Taste your dip and adjust seasoning with more salt or lime juice as needed.
  2. Transfer your dip to a serving bowl and top with chopped fresh cilantro before serving.

Notes

Keep the dip fresh by pressing plastic wrap directly onto the surface if storing. Use ripe avocados for best flavor and texture. Consider adding diced jalapeños or cayenne for heat.
